Easter Recipes: Traditional Roasted Lamb Shank with Vegetables & Brazilian Baked Cod

Roasted Lamb Shanks with Vegetables

Ingredients (6 persons): 1 leg of lamb, 500g carrot, 500g zucchini, 80g shallot, 2 tsp paprika, 8 cl peanut oil, 2 tbsp honey, 2 sprigs rosemary, salt, 200g pepper , 5 cloves garlic.


  1. Prepare the marinade: In a small bowl, combine pepper, honey, paprika, peanut oil, shallot, garlic, salt, and a pinch of rosemary. Place the leg of lamb on a large plate and spread the marinade evenly over the leg of lamb.   2. Prepare the vegetables: In a baking dish, arrange the sliced zucchini and carrots in alternating regular scales. Sprinkle with salt and pepper. You can also add 1-2 cloves of garlic according to taste.
  3. Preheat the oven at 220°C(428℉). Take the marinated lamb shank out of the refrigerator, and spread the remaining marinade on the bottom of the dish over the carrots and zucchini on the baking sheet. 
  4. Cook and serve: Stack the lamb shanks over the carrots and zucchini, and place the remaining rosemary sprigs over the lamb shanks. Put the baking tray in the oven for 40·50 minutes, take it out and let it stand for 5 minutes before eating.
  5. Arrangement: After cooling, shell the eggs and cut the baguette into strips. Form a crown with the salad in the center of the plate and place the shelled egg in the center. Slice an egg and sprinkle with fresh goat cheese, chives or pepper. Serve with prepared toppings on the side.

Bacalhau cod was originally a delicacy introduced to Brasil by the Portuguese. One of the most common recipes is the Bacalhoada cod dish, in which the fish is cooked with vegetables. Many Brazilian families were inspired by traditional Portuguese recipes, which evolved into Brazilian Easter recipes, which are now must-order menus in restaurants of star hotels
